To make sufficient pasta for four people you will need 200g of wholemeal wheat flour, two eggs and half a teaspoon of salt. 1. Sift the flour into a bowl and mix in the salt. Form a well and add the eggs. Use your hands to bind the flour and eggs into a smooth but firm dough. 2. Flour a surface and knead the dough for about ten minutes adding a little water if if the dough is to too crumbly. 3. Roll out and use straight away as lasagne sheets or cut into thin strips using a sharp knife and allow to dry, hanging over wooden dowel, for an hour before cooking your taglliatelle. |
